What are Ceramic Kitchen Knives?

I became interested in eating more raw food a couple of years ago and I would always see these strange looking knives being used in videos on raw food preparation. I never thought much about them and I really never thought I needed one.

I didn't think about getting one for myself until one day I visited a friend who had one. I saw her cut up a hot pepper, and than slice an apple for us. I told her I did not like hot pepper with my apple's and she told me that a ceramic knife like hers does not absorb the flavor of what it cuts so it won't transfer the taste. When I saw the paper thin slices she waseffortlessly cutting, I knew I had to look into this strange knife for myself.

I found that they are made from a material mined from the earth called zirconium oxide which is super hard and can therefore be sharpened to a very fine edge. They are so hard that they hold their sharp edge forever and they almost never need resharpening. If they ever do need it, the manufacturer will do it at no cost. It's hard to find value like that.

Most ceramic kitchen knives are manufactured to very high quality standards in Japan and they normally do not cost any more than any high quality metal knife from anywhere in the world. Add to that the fact that they last a lifetime and have little or no maintenance cost and they start to look like a real bargain.

The ease of use of these knives is the real value. They are very lite and feel great in your hand. the way it easily slices through fruits and vegetables makes the time spent on food preparation so relaxing and enjoyable that you look forward to it.

My new ceramic peeler is my most recent accessory upgrade and ceramic kitchen knives have become really the only knives I now personally use. I love them.
